Materials are key

Stainless steel

Food must be prepared and handled in non-porous surfaces that can be frequently cleansed with ease. Stainless steel is a forever favorite in commercial kitchen construction due to its properties: durability, practicality and hygiene. A stainless steel surface is not toxic, porous nor transmits flavors; it is inert in contact with aggressive substances and can sustain extreme temperatures often found in a kitchen. Unlike wood, a stainless steel surface doesn’t promote the growth of microorganisms that can be potentially harmful to end consumers. Stainless steel appliances and surfaces are a trademark of professionalism and cleanliness in any kitchen and its presence will be valued in any inspection. 

Resin

Regarding flooring, there are three options that are commonly used: resin, ceramic and vinyl. 

Resin proves to be the best option when it comes to commercial kitchen flooring due to its combination of durability, hygiene and anti-skid properties. Unlike ceramic tiles or vinyl flooring that must be entirely replaced once they lose the anti-slip coating, resin flooring’s coating can be reapplied every time it is required. 

Ceramic and vinyl rank below resin when it comes to hygiene. Although ceramic surfaces can be easily cleaned, the grouts remain a bed for bacterial growth, and vinyl flooring tends to become stained or discolored over time or as a consequence of the cleaning process, which can lead to an unprofessional appearance.

Wood veneer

While wood is not an appropriate material to be in direct contact with food, it does make for a great option when it comes to storage and can aesthetically please when it comes to decoration in a commercial kitchen. Wood veneer cabinets are resistant, customizable and hygienic due to their special waterproof coating that makes wiping down stains very easy.  A wooden touch can make the rigid design of an all-stainless steel kitchen more welcoming and warm.
